EFFECT OF DRY HEAT TREATMENT COMBINED WITH SODIUM ALGINATE ADDITION ON THE PHYSICOCHEMICAL PROPERTIES OF NORMAL CORNSTARCH.
The effect of dry heat treatment (DHT) at medium or high temperature (80-120°C) for different durations (0.4-5 h) combined ivith sodium alginate (AG) on the physicochemical properties and crystalline structure of normal cornstarch (NCS) was studied. DHT at 120°C combined with AG reduced the fin a l...

DHT at 120°C combined with AG reduced the fin a l viscosity, setback value, and gelatinization temperatures of NCS. DHT combined with AG exhibited a low-level effect on the gelatinization enthalpy and relative crystallinity of NCS and did not alter the X-ray diffraction pattern of NCS. Maximum gel hardness of NCS combined with AG was achieved after DHT fo r 1 h at 80°C, 100°C, and 120°C, respectively. When DHT was applied fo r the same time, the maximum gel hardness of NCS was achieved after DHT combined with AG at 100°C. DHT combined ivith AG did not change the crystalline type of NCS. pubtype: Academic Journal doctype: Journal Article ougenre: Article language: English refInfo: holdings: @attributes: islocal: N |
