By using this methodology it was possible to conclude that cacao occupied a central place in the social, religious and economic dynamics of a part of the pre-Columbian world. The facts gathered from these sources may help the Mexican tourism industry in two ways. First, providing a solid base for the development of a rich culture of gastronomichistoric tourism in places such as Chiapas and Tabasco, and, in second place, highlighting the importance that this ingredient, now so ubiquitous in international culinary traditions, has for the ancestral culture of Mexico. In this sense, with the help of the abundant tourist attractions that Mexico already offers, cacao may become living history. Mediante una extensa revisión documental de fuentes primarias y secundarias fue posible hacer una reconstrucción --principal objetivo de este artículo-- de las actitudes que los pueblos de habla náhuatl tuvieron hacia el cacao antes de la llegada de los españoles. A través de esta metodología se pudo descubrir que el cacao ocupó un lugar central en la dinámica social, religiosa y económica de una parte del mundo precolombino. Los datos obtenidos de estos textos pueden apoyar a la industria turística mexicana de dos maneras. En primer lugar, dando una base para el desarrollo de una rica cultura de turismo gastronómico-histórico en zonas como Chiapas y Tabasco, y, en segundo lugar, subrayando la importancia que este ingrediente, ahora tan ubicuo en las tradiciones culinarias internacionales, tiene para la cultura ancestral de México.
