These works share various characteristics pertaining to their origins-they were authored by and intended for culinary professionals-as well as their transmission-their practical purpose meant that users significantly modified their content. The dynamic nature of the recipes contrasts with the data provided by their surviving copies: three of them are manuscripts transcribed by professional copyists, intended to be preserved in a library rather than direct usage in kitchens. The fourth book has only been preserved in print. The paper delves into the features of these books and highlights their principal similarities. La tradició catalana dels llibres de cuina medievals està constituïda per quatre llibres de receptes que daten de mitjan segle XIV fins a la fi del segle XV. En ordre cronològic, es tracta del Llibre de Sent Soví, el Llibre d'aparellar de menjar, el Llibre de totes maneres de potatges i el Llibre del coc de Mestre Robert. Aquestes obres comparteixen diversos trets vinculables als seus orígens -van ser escrits per cuiners professionals per a ús d'altres cuiners-, com també a la seva transmissió -la seva finalitat pràctica va condicionar que el contingut dels llibres fos notablement modificat pels usuaris. La naturalesa dinàmica de les receptes contrasta amb les dades que n'ofereixen els exemplars que n'han sobreviscut: n'hi ha tres que són manuscrits obra de copistes professionals, destinats a la biblioteca, no pas a la cuina. El quart només s'ha conservat imprès.
