In parallel, the demand for probiotics has increased from consumers who are increasingly aware of the close relationship between our microbiota and health, whether in the form of a suspension, dehydrated or added to food matrices. The maintenance of cell viability and vitality is of the utmost importance, these products require the development of strategies that ensure the integrity of the cell components and functions that allow the complete recovery of the cells at the time of consumption. Once consumed, probiotic cells must contend with a very potent set of physicochemical changes, mechanisms within the body, including enzymes, antibacterial molecules, and sudden changes in pH. Understanding the action of these agents and the induction of cellular tolerance mechanisms is essential for the selection of increasingly efficient strains in order to survive from production to colonization of the intestinal tract and promote the desired health benefits. However, of the thousands of strains isolated each year for their probiotic potential in laboratories around the world, very few make it to an industrial development phase and fewer still achieve a commercial life. In this article, general aspects related to probiotics and prebiotics until their commercialization are reviewed, focusing more attention on natural probiotics. En los últimos años, el campo de los probióticos y prebióticos ha experimentado un gran auge, lográndose avances científicos y clínicos que han permitido el desarrollo y comercialización de diversos productos. En paralelo, ha aumentado la demanda de probióticos por parte de unos consumidores cada vez más conscientes de la estrecha relación entre nuestra microbiota y la salud, ya sea en forma de suspensión, deshidratadas o añadido a matrices alimentarias. El mantenimiento de la viabilidad y vitalidad celular es de suma importancia, estos productos requieren el desarrollo de estrategias que aseguren la integridad de los componentes y funciones celulares que permiten la recuperación completa de las células al momento del consumo. Una vez consumidas, las células probióticas deben enfrentarse a un conjunto muy potente de cambios fisicoquímicos, mecanismos dentro del cuerpo, que incluyen enzimas, moléculas antibacterianas y cambios repentinos en el pH. Comprender la acción de estos agentes y la inducción de mecanismos de tolerancia celular es fundamental para la selección de cepas cada vez más eficientes con el fin de sobrevivir desde la producción hasta la colonización del tracto intestinal y promover los beneficios de salud deseados. Sin embargo, de los miles de cepas aisladas cada año por su potencial probiótico en los laboratorios de todo el mundo, muy pocas pasan a una fase de desarrollo industrial y menos aún son las que consiguen una vida comercial.
