En este artículo analizamos fitónimos y zoónimos documentados, a mediados del siglo XVIII, por los jesuitas Brigniel, Dobrizhoffer y Sánchez Labrador, en las lenguas guaycurúes: abipón y mbayá. Tales registros dan cuenta del conocimiento botánico y zoológico de estos pueblos cazadores-recolectores del Gran Chaco. Abordamos, desde el campo de la historiografía de la lingüística misionera, dicha labor de documentación jesuítica con el fin de describirla y compararla. Evidenciamos, además, procesos morfológicos en la denominación de especies nativas -los cuales expresan información acerca de sus características físicas o comportamientos, o sobre sus usos comunitarios- e identificamos neologismos para designar especies introducidas.
