| Sumario: | Este artículo ofrece una reflexión crítica sobre el estado del conocimiento en materia de alimentación y nutrición en Chile. Para ello se analiza la producción historiográfica y los tratamientos que se han hecho al tema desde la perspectiva del consumo, la cultura y la salud. Posteriormente se aborda el surgimiento de la ciencia de la nutrición y su lucha en contra de la mortalidad infantil y la desnutrición. Los enfoques transnacionales, actualmente en boga, permiten poner en valorlos esfuerzos realizados a nivel continental por los gobiernos e instituciones internacionales para implementar políticas de alimentación popular.
ABSTRACT
This article provides a critical reflection on the condition of knowledge on food and nutrition in Chile. For this it analyzed the historiographical production and the treatments that have been made from the perspective of the consumption, the culture and the health. Later there is approached the emergence of the science of nutrition and its fight against infant mortality and malnutrition. The transnational approaches currently in vogue, allow valuing the efforts at continental level by governments and international institutions to implement policies of popular food.
